Oregon Oyster Fest (OOF) debuts this month at Pal’s on Hayden Island. In partnership with Hama Hama Oyster Company, Pal’s is honoring all things oysters, with educational workshops, Oyster Faires, creative chef collaborations, and an oyster party to cap off the weekend.

Each day, the mid-morning classes, including “Oysters 101” and a cocktail pairing workshop with Fords Gin, usher in an afternoon Oyster Faire. Think: mini martinis, oyster samples from Oregon oyster farmers, and a mignonette competition featuring local chefs, all enjoyed along the shores of the Columbia River.

The weekend’s centerpiece takes place on Saturday evening, when Chef Jorge Luis Hernandez of Isidore in San Antonio teams up with Pal’s Chef Conrado Gonzalez for a curated dinner exploring oysters through the flavors of South Texas and Mexico. The experience centers on bold, precise cooking built around peak-season shellfish.
