Experience a one-of-a-kind dining experience celebrating the incredible flavor of dairy beef from a local female-owned first-generation farm, Vorfreude Dairy Beef. This unique and delicious Dairy Beef will be showcased by five of Portland's finest chefs, featuring five different beef cuts for their dishes, finished with a 6th course of dessert.

Chefs Louis Lin of Xiao Ye, Tara Lynch from Portland Secret Dining Society, Luna Contreras from Chelo, Alex Guner from Rangoon Bistro, and Taylor Manning and Siobhan Speirits from Cafe Olli, plus Vorfreude Dairy Beef's farmer/owner Rachel Hinnen.

Dairy beef has a delicious, complex flavor, beautiful marbleization and vitamin-rich fat. Much like fine red wine or whiskey, dairy cattle meat develops a deep, rich flavor with age. Dairy beef fat is a rich yellow color and has a sweet buttery taste and texture—which comes from a life of eating alfalfa, grass, and other high-quality forage and reflects the rich cream content in the milk they produce.

All Vorfreude Dairy Beef cows are carefully sourced from local dairies with the highest standards of animal husbandry. This allows dairy farmers to get more money for their cows, the cows don’t have to go through the stress of auction, and they are used to their highest purpose as premium beef rather than commodity burgers.

This dinner event will feature not only this beautiful and unique beef presented by five of Portland's best chefs but also Vorfreude Dairy Beef's farmer/owner Rachel Hinnen, who will be there to talk about the product and process. There will also be an opportunity to buy frozen cuts of the beef and nose-to-tail products made with the cows' tallow and hides, like tallow face and body butters, tallow candles and soaps, along with leather wallets, key chains and bracelets.
