During his tenure as chef de cuisine, 2024 James Beard Award winner Gregory Gourdet designed dishes with a modern twist using traditional Asian preparations and Northwest ingredients. Departure’s bar showcases exotic cocktails, a global wine list and the city’s largest sake list.
